PREPARATION
- Preheat oven to 450 F.
- In a large bowl, toss potatoes with olive oil, salt and pepper. Roast for 15-20 minutes or until tender and slightly golden. Remove from oven and allow to cool slightly.
- In a large bowl, mix Astro yogourt, cilantro, green onions, yellow pepper, chipotle pepper, Dijon mustard, and lime juice.
- Add potatoes and mix until combined. Season to taste with salt and pepper. Serve warm, chilled or at room temperature.
